Muffin Quest

I want to bake a muffin with super powers -- something on the order of a nutrition blast -- that I can make in a batch and freeze individually. I also want it to taste good, though not like cake. I'm thinking on the order of something with blueberries and walnuts, or cranberries and pecans,. Anybody got any ideas or any recipes?

Comments:
i goggled and got a possiblity: morning glory muffins listed on the mayo clinic site. they are a little high in calories and carbs, but they sound pretty yummy.

Thanks. I found it and it looks good.I tend to avoid carrots as food, but like carrot cake so would probably like that. I have found a banana-oatmeal muffin recipe, and a blueberry oatmeal muffin recipe, and discovered an Oat Bran Muffin Mix at Kroger. Will report back. Wish it were possible to send muffins by e-mail. (Someday if will be, of course)
I am still enjoying your Sargent fiction.

i think there is also a raisin bran refrigerator muffin recipe floating around and you could probably add things to that. i think it keeps in the fridge for about a week. i've made it years ago and it wasn't too bad. not like a snickers bar though.:)

I am not a raisin fan.
Thus I want no raisin bran.
Besides, you admit that it's not as good as a Snickers bar. My Platonic Ideal of a Muffin WILL be as good as a Snickers bar, but also good FOR me. It will have carbs, but GOOD CARBS. It will not put me on a blood sugar roller coaster. It will have fiber AND antioxidants. Possibly I will run for governor.

I just made a batch of muffins with an oat bran muffin mix enhanced with oatmeal and wheat germ, frozen blueberries, walnuts and grated orange rind.
Ate one. Excellent. Dense like good banana bread. Full of crunchy stuff and berries.
I can envision variations on this theme, but think I'm on the right track.

i will have to pop by kroger and get a box and try it with minature snickers bars....just kidding

You scoff, but I have lost 40 lbs. since eating that miracle muffin. I am shrinking before my very eyes, and you would not believe the muscle tone!

i am not scoffing, tittering maybe.:) my body would die of shock if i really ate healthy stuff. red dye # 5 is all that holds my body together some days.

Maybe I'll bring you some of my lentil and prune pilaf. :)
In a best of all possible world, I would live on fried chicken, biscuits with sawmill gravy (with lots of pepper) and Reeces Cups, or maybe babyback ribs washed down by Harp's Beer. However, I am No Spring Chicken, so I am trying to get serious about body maintenance. I even had a m..gram the other day (Maybe that should go on the brag list!)
